Avocado chicken sliders with organic field greens and garden fresh tomatoes on potato rolls
I’ve been MIA for a little while due to resuming my breast reconstruction, so I do apologize for not being around to post yummy recipes, but typing is one of the few things I am allowed to do now, so here we go! Time to get back in the swing of things.
This is one of my favorite meals. It is quick, delicious and everyone in the house likes them. I am not a big beef eater, so chicken, turkey or veggie patties are usually my choice for burgers of any kind. These are not only tasty, they are quick to prepare and come pre-seasoned.
Of course, the Corsos are in attendance
Pre-seasoned antibiotic and hormone-free mini chicken patties
Cook approx 5 mins each side or until internal temp reaches 160 degrees F

Fresh cilantro adds a brisk, delicious component
Avocado slices are perhaps my favorite part
Roasted red pepper sauce adds a wonderful layer of peppery flavor
A nice spring mix is a great compliment to the juicy red tomato and smooth avocado
For that much needed crunch, try veggie straws instead of potato chips

The roasted red pepper sauce is something I borrowed from Paula Deen. The recipe is as follows:
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1/3 cup chopped roasted red peppers, drained well
Salt and pepper
In a small bowl, combine the mayonnaise, mustard and garlic. Stir in the peppers and season with salt and pepper. Cover and chill.
If you want the red pepper mixture to be more like a sauce, you can put it in the blender with a little bit of water and blend well. If you like chunks of pepper, leave it as is. I personally don’t like it chilled but rather room temperature. If you don’t have any peppers but still want a nice flavor to accompany your sliders, you can use french dressing in a pinch. You may also notice regular mayo on the sliders in the photo. I do like regular mayo, so I prefer to use it as well. That’s the great thing about these little guys–you can dress them up (or down) any way you like!
