Made From Scratch Chocolate Chip Pancakes

Ok, so I’m really into the chocolate chips this week.  🙂  First the bread and now pancakes.  But they are SO good.  And quick.  Oh yes, and they’re cheap, too.

This excites me.

About once per week we have a pancake night.  The kids love breakfast for dinner and I love the easy prep.  Not quite as easy as boxed pancake mix, but eons better.  Trust me on this, if you’ve never made pancakes from scratch, you’ve got to try it.  My family commented on the difference in taste immediately.


1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar (if you don’t have any handy, brown sugar works)
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
1/2 cup semi-sweet chocolate chips
1/4 tsp vanilla extract
In a large bowl, sift together the flour, baking powder, salt and sugar.  In a separate bowl beat the egg, adding milk, melted butter and vanilla extract.  Make a well in the center of the flour mixture in the first bowl and pour in wet ingredients.  Begin mixing, slowly incorporating all the dry into the wet.  You have two options with the chocolate chips.  You can either add them to the batter now or add them one pancake at a time.  I often do the latter because I have some in the house that want plain pancakes, or perhaps we have some blueberries and I am doing blueberry pancakes at the same time.  It is easier to add them per pancake than to have to make bowls of different batters.

Baking powder
If you can find organic sweet cream butter, do.  It is wonderful.  We buy ours in bulk at our local warehouse store.
Melt 3 tablespoons
Add to batter
Add just a touch of vanilla.  I never measure.  This is to taste.  Some people like more of a vanilla flavor.  I just like a hint of it.
Blended ingredients
Semi-sweet mini chocolate chips
Heat a lightly oiled griddle or frying pan over medium high heat. Pour the batter onto the griddle/pan, making your pancakes whatever size you wish.  I do large ones and small ones.  The littler ones are easy for the toddler to pick up and of course my husband and teenage son want large pancakes.
Take a few chips
Drop into the batter as it cooks
When you see a lot of little bubbles, your pancake is ready to flip over
Super delicious real bacon from the local butcher, for the husband
Much healthier but equally delicious “facon” (veggie bacon) for the kids and myself.  The toddler actually prefers this to real bacon.
These can also be frozen for later use.
